I get French fry cravings… far more often then would be healthy to indulge. So I have resorted to making my own oven baked version. Which still dose a pretty good job of fulfilling the fries craving, only with way less fat! Now they have the frozen versions, but when making fresh is so easy… frozen seems unnecessary. I think the most difficult part of the whole process is waiting for them to bake up to crispy!

These also make a wonderful side dish or snack. Also, they can be easily tweaked to match whatever your pairing them with.

Balsamic Oven Fries

This makes enough for 2 people (although you may want to make extra since no one likes to share these!)

3 medium-small potatoes, cut into thin wedges

1 Tbs olive oil

1 Tbs balsamic vinegar

¼ tsp garlic powder

½ tsp ground black pepper

Dash dry parsley and salt

Pre-heat oven to 450°. Line baking sheet with parchment paper.

In large bowl, toss potatoes wedges with all ingredients until the wedges are all covered. Place fries on baking sheet, spacing them out and standing them up on the wide end to achieve best crisping.

Bake 25-35 minutes, until crisp.
