Creamy Pesto


½ bunch basil

½ bunch parsley

2 Tbs olive oil

2 cloves garlic

2 Tbs parmesan

Splash lemon juice

2 Tbs butter

2 Tbs cream cheese

1/3 c dry white wine

¼ c rice milk

1 tsp flour

In a food processor puree the basil, parsley, oil, garlic, parmesan and lemon juice until thoroughly combined. Set aside.

In a sauce pan over medium heat melt butter and cream cheese, completely. Add white wine and rice milk and cook for another few minutes, whisking to combine. Add the flour and bring to a low boil, stirring continuously.

Add the pesto to the creamy base and cook over low heat for another 5 minutes.

I served this over angle hair pasta and sautéed vegetables.
