I was up at mom’s this Sunday for Mother’s Day and we were discussing the dessert plan. She wanted something with chocolate and I was in the mood for something with fresh fruit. Thus this variation of the fresh fruit pie was born. This pie is super easy to make and exceptionally tasty. It adapt easily to any fresh fruit combination, I’ve done it with mango as well and it turned out amazing.

The chocolate at the bottom was a great touch. It was just the right amount of chocolate to balance the fruit.

Fresh Fruit Pie (adapted from Betty Crocker)

9 in pie crust, baked and cooled

1 qt strawberries

1 pint of blackberries

1 c sugar

3 Tbs cornstarch

½ c water

4 oz cream cheese, room temperature

2/3 c melted semi-sweet chocolate

Mash enough berries to make a one cup. In a small sauce pan over medium heat combine the mashed berries, water, sugar, and cornstarch. Bring to a boil, stirring constantly, boil and stir for one minute then remove from heat.

Beat cream cheese and chocolate together and gently spread the combination over the bottom of the pie crust. Top with the remaining fruit (strawberries should be sliced into bit sized chunks). Pour cooked berry mixture over top. Chill for at least 2 hours before serving.
