Been out of town visiting family for the last few days so cooking hasn’t really happened. Now that I’m home, I’ve been crazy busy at work. Just trying to keep my head above water. So, in hope that you will forgive my ignoring you and skipping out on this week’s cooking challenge recipes in exchange for a few trip pics and a amazing breakfast pizza recipe.

I’ll be honest, I didn’t even kind of stick with the recipe on this one. It was the inspiration, but had very little bearing on the finished product.

Breakfast Pizza (inspired by Easy Dinners Vegetarian)

Crust: Biscuits (Betty Crocker Cookbook)

2 c flour

3 tsp baking powder

1 tsp salt

1/4 c shortening

1/4 c milk

Combine dry ingredients and mix thoroughly.  Cut in shortening until mixture resembles meal. Stir in milk until it forms a soft puffy dough.

Round dough and knead lightly, 20 to 30 times, on a well floured surface. Roll out into a long rectangle.

Bake at 425 for 6 minutes and remove.

Toppings

1 c gravy

1/2 c crumbled breakfast sausage

1/2 c chopped mushrooms

1/2 medium onion, thinly chopped

1 tomato seeded and chopped

4 eggs, scrambled

2/3 c shredded cheese

Spread gravy over the toasted biscuit crust. Top with sausage, onions and mushrooms. Next, evenly distribute the eggs over the pizza. Top with tomato and cheese. Bake at 425 for another 15 to 20 minutes. Allow to cool for at least 5 minutes before serving.
