We got the ice cream maker attachment for out KitchenAid shortly after the wedding. It may be the wedding gift my hubby was most excited about, with as much as he loved ice cream! Trying it out has been high on his list of priorities ever since it arrived. So, this Monday we did just that… and let me tell you, we may be on a quick route to weight gain because it was easy and delicious! We did a super simple vanilla that is amazingly creamy (found the original recipe here). Of course I also decided to play with it a bit and added a little peanut butter to 1/3 of the batch. It is even better with the peanut butter and the peanut butter version is the one I’ll be sharing with you!

This was so easy I can pretty much guarantee we will be using it all summer long! I’m definitely going to have to work out some lower-fat recipes though, because if we eat this for months on end we are going to end up hefty…

Vanilla Ice Cream with a Peanut Butter Swirl

3 c heavy cream
¾ c sugar
dash salt
¾ teaspoon vanilla extract
½ c peanut butter

In a medium saucepan over medium heat combine 1 cup of cream, sugar, salt, and vanilla. Stir often, until sugar is completely dissolved. Remove from the heat and whisk in the remaining 2 cups cream.

Cool for about 2 hours, or until completely cool.

Pour cool mixture into KitchenAid ice cream bowl with the beater running (be sure to follow manufactures instructions). Allow to stir for about 10 minutes. Add peanut butter and allow to mix for another 10 to 15 minutes. Spoon into a freezer safe container and freeze for 2 to 4 hours.
