Layered Chocolate Cheesecake Bar

Once again I’ve been neglecting my blog… this time due to a question the hubs and I have posed to ourselves and the complete and utter lack of answer thus far. We’re trying to decide if we want to sell our home and use the equity we’ve built to put a down payment on the next house.  It is a question that, even after much discussion, meeting with our realtor, and prayers, we still have no answer. It has become the focus of most conversations at home and I think we’re both losing sleep over it. It has definitely reduced my inclination to write. If you have any words of wisdom, experience selling a home (something we’ve never done and scares me) or other advice, it would be much appreciated.

Fortunately, this looming question hasn’t stopped me from baking! These tasty treats were concocted for a bridal shower I was helping with recently. One of the bride’s favorite desserts is cheesecake and she loves chocolate, so these seemed like the logical conclusion. They went over well, and best of all, the bride liked them!

Layered Chocolate Cheesecake Bars

Crust:

2 packets of chocolate gram crackers (boxes come with 3 packet in them)
½ c (1 stick) butter, melted
3 Tbs brown sugar
Pre-heat oven to 325⁰.

Crush the gram crackers and mix with the butter and sugar. Press mixture into the bottom of a 9” x 13” cake pan. Bake for 10 minutes. Set aside to cool.

 

Cheesecake Layer:

3 (8oz) packs of reduced fat cream cheese, room temperature
1 c sugar
2 Tbs flour
1 Tbs vanilla
8 oz plain greek yogurt
3 eggs

With an electric mixer, cream together the cream cheese, sugar, flour and vanilla until light and fluffy. Add the greek yogurt and mix until thoroughly combine. Add eggs one at a time, mixing thoroughly between each.

Pour mixture over prepared crust and back for 45 minutes (oven should still be on 325⁰).

 

Chocolate layer:

1 bag (11-12oz) milk chocolate chips (I used Ghirardelli)
2 Tbs butter
¼ c half and half
8 oz plain greek yogurt

In a double boiler melt the chocolate chips and butter. Once melted, slowly add the half and half, whisking until completely incorporated.

Remove from heat and fold in the greek yogurt. Mix until completely incorporated. Pour over the cooled cheesecake bars.

Chill in the fridge for at least an hour before serving to allow the chocolate to set.
