It may be slightly unnecessary to have a Costco membership for just the two of us… The quantities are excessive and that place is always a mad house. I’m pretty sure I have almost been run over by a cart at least five times. But, they do have some good prices on meats (which we just portion out and freeze), coffee and paper goods. Occasionally we get fruit or veggies there, but usually it’s too much for just two people. One thing we regularly get is a two pack of whole chickens. The hubs does a mean smoked chicken and then we can use the leftovers thought the week for meals.
This chicken salad was the result of one of those chickens, some strawberries that needed using and the hubs weekend lunch craving. He asked for chicken salad and I decided to do something a little different (you know, aside from the curry or classic chicken salads). I highly suggest adding the sliced strawberries to the sandwich. It was a great flavor combination, very summery and fresh. Both of us really enjoyed this and it will definitely be made again!
Dijon Poppy Seed Chicken Salad
2 chicken breasts, cooked and diced
¼ sweet onion, finely chopped
1 celery stalk, chopped
1 Tbs Dijon mustard
¼ – 1/3 c light mayo
2-3 Tbs apple cider vinegar
1 Tbs honey
2 tsp poppy seeds
Dash ground black pepper, garlic powder, ground mustard
Combine all ingredients in a large bowl and stir well. Refrigerate if not using immediately.
