Chicken and Black Bean BurritosI don’t know about you, but sometimes all I really want is a fast and tasty dinner. Something homemade that isn’t going to take forever to get on the table. Usually it’s on days that I’m late getting home from work, starving and grumpy. But… maybe that’s just me. While the majority of the recipe I share here tend to be a little more involved, I assume that an occasional quick recipe might be appreciated.

This is one such recipe, I tossed these together the other night and they definitely fit the bill for a quick and easy dinner. I decided they were fast and tasty enough to share. Plus, they were ready to eat in 40 minutes, start to table!

Chicken and Black Bean Burritos

Chicken and Black Bean Burritos
1 tsp olive oil
½ sweet onion, sliced
½ sweet bell pepper, sliced
1 chicken breast, diced
1 can black beans, drained and rinsed
3 Tbs salsa
1 cup (5.3 oz) plain greek yogurt
Hot sauce of choice (I used sriracha)
5-6 tortillas (the medium sized variety)
1 small block 2% cheddar cheese, shredded (7-8 oz)

Pre-heat oven to 400ᵒ. 20 minutes

Heat olive oil in a medium saute pan over medium heat. Add the onion and bell pepper and cook for about 5 minutes. Add the diced chicken and cook for another 5 minutes or until chicken is cooked through. Add the salsa and black beans and stir together.

Line a baking sheet with foil.

Spread a spoonful of yogurt and a touch of hot sauce on each tortilla. Divide chicken mixture and cheese among the tortillas. Roll, closing one side as you roll up the burrito. Place the burritos, seam side down on the baking sheet.

Bake for 15 to 20 minutes, until exterior is crisp and cheese is melted.

Serve topped with your favorites – we did salsa, lettuce and guacamole!
