I gave up… and I hate it. It makes me feel like a total failure. It’s silly, I’m only giving up on a challenge I posed for myself, yet I can’t help feeling guilty about it. Earlier this month I realize there was no way to complete the cooking challenge and stay sane. Not with all that was going on around the holidays and all the holiday baking I choose to do. I’m only just now admitting defeat because I’m so frustrated (I know, you’re all devastated the cooking challenge is over).

Anyhow, I have a ridiculous backlog of recipe I need to share and I will be doing my best to get them up here soon! The first to share (and kind of good for the new year since it’s kind of healthy): Tofu Chocolate Mousse. It’s not TOOO terrible for you and really quite chocolaty and satisfying*!

*Here is my disclaimer: I am so use to the flavor of soy since I use soy sour cream, soy cream cheese, and drink soy milk that I’m highly acclimated to the taste. Rooms was not quite as into this dessert as I was. I, however, loved it!

 

Tofu Chocolate Mousse (Eat Clean Diet Book)

3/4 cup semi-sweet chocolate chips
1 package silken tofu, room temperature and drained
1/2 cup warmed milk
1 tsp vanilla

 

Melt chocolate chips in the microwave, stirring periodically until smooth.
In a food processor, combine tofu, melted chocolate, milk and vanilla. Pulse until smooth and fluffy.

You can eat it immediately (we sure did) but if you let it chill in the fridge it will be a bit more mousse-like. It was fantastic with pomegranate on top!
